Classical topics of Colloids and Interface science receive recently a renaissance driven mainly by the progress in computational power that enable more realistic molecular modelling and the advent of novel powerful surface analytical tools. This talk reviews our findings to gain an understanding of the static and dynamic properties of amphiphiles at interfaces. The following aspects are discussed: • Link surface tension to the molecular conformation of its constituent amphiphiles • Determine the ion distribution at a charged interface by optical means • What governs foam stability? • Interpretation of the surface dilational viscosity
