We will show how the AFM techniques (imaging and force spectroscopy modes) can be used to characterize polysaccharides from single molecules to nano crystals and supramolecular assemblies giving complementary informations to TEM, DLS. We will also go a step futher to probe the interactions between sugar and lectins and between sugars.
